So, the husband’s favorite protein is by far chicken. However, he also really likes bacon. I have never made bacon wrapped chicken, but it seemed worth a shot. I am amazed by how well it turned out. The roommate had mushrooms and gorgonzola in his chicken roll-up. The husband had carmelized peppers and onions in his. We broiled/baked the chicken in casserole dishes. To top it off the roommate used the bacon drippings from the bottom of the casserole dish to make bacon gravy for the mashed potatoes. It was fantastic all around. The pics show the progression from raw meat to finished product.

Is it decadent to start your at-home meal with an appetizer?

Gruyere spread, capers, and salami on french bread.

Followed by lovely au gratin potatoes, white and green asparagus with mushrooms, and wilted greens with butternut squash.

I have lived with the roommate for about 18 months now and I don’t know if I have ever noticed him making the same meal twice. I have also never seen him use a recipe. Crazy savant.

Roommate goodness. Mustard greens, onions, zuchini, bell peppers, and rice. He feeds me so well.

Nothing special here, but the husband digs simple meals.

The chicken was roasted, the carrots were honeyed, the rolls were Pillsbury, the salad was ranched, and the potatoes were mashed.

I had a great moment while I was updating today. I was looking at a picture of one of our favorite meals and I realized that there are now so many posts on the site that I didn’t know whether or not I had ever covered this dish. Holy Crap! There are now 52 posts on the site. I had to look back at all the posts and see if Black Bean Sloppy Joes had made it yet. Not so far, so here they are. This is a great recipe and if anyone wants it I would be happy to share. I found it online years ago. Low fat. High protein. Very filling. Those fries with it are just some freezer french fries that I tossed with some pesto.

I wonder if I will make it to 100 posts. For those of you who stick with me even though I am terribly sporadic, Thanks!!!

Soup Nazi, I am not

I love soup. I can pretty much eat soup at every meal (yep, that includes breakfast). Usually my homemade soups are pretty good. This one was not one of those soups. Roasted butternut squash puree. Seemed like a good idea, but way way too sweet. I liked it enough to at least eat it. I can’t say the same for the roommate or the husband. Oh well. Better luck next time.

Another Veggie Burger Meal

I know. Lame. I can’t help it. The Veggie burgers come 4 to a box. At least I fancied it up a bit by using a bagel and I know you can’t tell, but there is herbed cream cheese on that bagel too.

There is a diner style fast food restaurant in my home town that claims to have the best PB&J. It is pretty dag-gone good. They put peanut butter on one side of the bread and strawberry jelly on the other. Then they cover the peanut butter with peanut bits and cover the jelly with slices of fresh strawberries. It is a winning combination. However, my favorite is peanut butter and banana. I decided to combine the concepts and do up a peanut butter, strawberry jelly, strawberries, and bananas. I didn’t have any peanut bits, but it worked out just fine.

A Little Bit French

This is my attempt at a classic French Cassoulet. I loved it. Had to just eat around the sausage and I didn’t include the Chicken which is supposed to be in the recipe, but I still consider it a sucess. Worth trying again.

Hubby’s Favorite Meal

I can’t remember if the husband did anything to earn such a spread of his favorite foods, but they are all there…fried chicken, mashed potatoes, skillet corn, gravy. The green beans aren’t exactly a favorite of his, but I love ‘em. These were made with sauteed onions and everything was glazed with a little tahini. A good meal.
